Are Grafta invoices valid Irish VAT invoices?

Yes. Your VAT number sits on every invoice, numbering is sequential automatically (no gaps, no repeats — even if two invoices are created at the same moment), VAT is applied per line at the rate you set, and the totals are calculated for you. If you're not VAT registered, leave VAT off entirely — which is exactly what Revenue expects.

Can I put my bank details on the invoice?

Yes. Add your IBAN, bank name and payee name once in Settings and every invoice PDF carries a payment block with them — so there's nothing stopping the customer paying the moment they open it. Part payments can be recorded too, and the invoice tracks the remaining balance.
